Hog or beef purchased from The Meat Market

Our beef and hogs are locally raised right here in Sauk County. They are hormone and antibiotic free. All of our beef are aged 2 weeks prior to cutting. We will custom package all of the cuts to fit your family’s needs.

Turnaround time for hogs is usually less than 2 weeks and for a beef is usually less than 3 weeks.

Average cost of beef processing — Retail

Half of beef  range from 400 – 450# of hanging weight $3.29 per lb.

  • Rump, sirloin tip, chuck and arm roasts
  • Rib steak, T-bone, porter house, club steak, top sirloin
  • Round steak (may have cube steak or stew meat as well but is extra cost)
  • Short ribs, soup shanks
  • Burger: usually around 100# or more
  • Price range: $1,300.00 – $1,500.00

Split half of beef  range from 200 – 250# of hanging weight $3.29 per lb.

  • get all the cuts from whole half just a ¼ of it instead of a whole half
  • Usually between 60 – 70 # of burger
  • Price range: $650.00 – $820.00

Hind quarter  $3.49 per lb.

  • Rump, and sirloin tip roasts
  • T-bone, porterhouse, club steak, top sirloin, round steak soup shanks hamburger
  • Usually 40 – 50# of burger
  • Price range: $700.00 – $875.00

Front quarter $3.09 per lb.

  • Arm and chuck roasts
  • Ribeye steaks
  • Soup shanks, short ribs
  • And burger
  • Usually 50 – 60# of burger
  • Price range: $620.00 – $775.00

  • Ham, Bacon, Pork Chops, Steak, Shoulder and Loin roasts
  • Hocks, spare ribs, sausage

 
Half hog  estimated cost: $225.00

  • 100# hanging weight
  • Ham, Bacon, Pork Chops, Steak, Shoulder and Loin roasts
  • Hocks, spare ribs, sausage
